A few months ago I shared my mom’s delicious recipe for Broccoli and Rice Casserole. Recently I was re-reading the comments in that post, and saw that a reader (Kathy) had mentioned that she likes Broccoli and Rice Casserole with ham in it. Hmmm… that sounded like a great addition!

I love ham, and happened to have some in the freezer. So, the next time I made the broccoli and rice casserole, I just added a cup of chopped ham. Simple and fast. Just the kind of recipe I like!
Easter is coming up soon, and if you were having the broccoli casserole and a ham, you could combine the leftovers to make a delicious casserole. This broccoli and rice casserole recipe is a super dish for a holiday meal because you make it in the crock pot, leaving more room in the oven.
Broccoli And Rice Casserole With Ham
1 cup of diced ham
1 (2 lb.) package frozen broccoli
1 medium onion – chopped
2 cans condensed cream of mushroom soup – (don’t add milk)
1 cup uncooked Minute Rice
1 small (8 oz.) jar of Cheez Whiz
1. Combine all ingredients in crockpot.
2. Cook on high for about 4 hours.
