A few months ago I shared my mom’s delicious recipe for Broccoli and Rice Casserole. Recently I was re-reading the comments in that post, and saw that a reader (Kathy) had mentioned that she likes Broccoli and Rice Casserole with ham in it. Hmmm… that sounded like a great addition!
I love ham, and had some in the freezer. So, the next time I made the broccoli and rice casserole, I just added a cup of chopped ham. Simple and fast. Just the kind of recipe I like!
